11/15/09 11:33:32 am 福清光餅 福清光餅 福清光餅 據福州府志記載：明嘉靖四十二年（西元1563年），民族英雄戚繼光率軍入閩追殲倭寇，不想連日陰雨，軍中不能舉灶，戚繼光便命烤制一種最簡單的小餅，用麻繩串起掛在將士身上充當乾糧，大大方便了作戰殲敵。後來，這小餅流入福清民間，不但普遍食用，而且還成為祭祀神靈祖先必備的供品。後人感念戚公，便把這種小餅叫作“光餅”。 當地百姓為了紀念這一事件，根據光餅製作過程和動作創作了光餅舞，流傳至今。 注：光餅舞屬於勞動技能性民間舞蹈，共分三部分，依次為"奔襲"、"烤餅"、"犒軍"。其中第二部分"烤餅"的雙人舞形式，是光餅舞的主體，表現福清光餅的製作過程，按順序分成點火、烤爐、貼餅、烘餅、鏟餅五個小節。第一、三部分為集體舞形式。音樂、動作中有戲劇中的小射雁步、騎馬步和八字跳等。整個舞蹈具有節奏感強、動作幅度大等特點。1958年，經福清民間藝人整理加工的光餅舞融入了民間兒童遊戲"拍餅舞"、"頂籮舞"部分動作，當年參加了福建省民間文藝匯演；1984年被收入《中國民間舞蹈集成?福建省卷》。至今，福清百姓在農閒期間或遇喜慶節日還組織表演這一民間舞蹈。誇張點說，簡直可稱之為融音樂與舞蹈為一體的勞動藝術。 福清市人做光餅，至今還保留著自己的一套，不但新鮮，而且有趣，他們烤光餅用的是一口高近兩米、直徑約有一米的外裹黃泥的大缸。先用成捆的松枝在缸內點起沖天大火把缸壁燒“白”，缸底只剩餘燼，然後把做好的餅胚，由兩人合作，伸手入缸，飛快準確地貼在缸壁之上，若是遲緩一點，就怕那光著的手臂要烤出泡來。由於烤光餅時面對著的是一隻大火缸，所以不分冬夏，兩人都打著赤膊。他們一個遞胚，一個接胚往缸貼，身子一伸一欠，一俯一仰，動作敏捷，配合默契，再加劈劈啪啪的貼餅聲，仿佛音樂伴奏，節奏感十分強烈。不消十分鐘，幾百隻光餅便全部貼完，然後再用炭火慢慢把餅烤熟，真是叫人大開眼界。在這種大缸裡烤出的光餅，只只金黃，十分香脆。 福州市區賣光餅的小店，都是門市和作坊混在一起。福清的光餅卻是由作坊做好分發給小販去賣。所以，在福清，沿街到處都可見賣光餅的小攤。那小攤上的光餅堆如小山，倒成了福清的街頭一景。 Fuqing Kwong Chi cake According to Fuzhou's record : withdrawn contribution (A.D. 1563), deployed the course of pursuing and annihilating Japanese pirate late national hero Qi Jiguang, not Lianriyinyu, the military can not give stoves, Qi Jiguang's favorite is one of the most simple'd use hemp rope to the officers and men who served as director dry, greatly facilitated operations destroying an enemy.
